Auntie's Khir

White like this crooked duck.

This Khir (Indian Rice Pudding) is fan-freaking-tastic. Auntie Surabjit has passed on this wonderful way of making it. Make this for breakfast, for people you really want to face a challenge with. These amounts will feed roughly 40.

5 cups white rice (rinsed)
5 cups water (to soak)
4-6 liters Soy or Rice milk
2 cans (400ml) coconut milk
3 cups brown sugar
2 tbsp cardamon seeds (taken from shells)

Rinse the rice, and then soak over night in 1 to 1 water. Next morning, bring to boil, and then add the milk small amounts at a time, stirring frequently to avoid burning to bottom. When all milk has been added, and it's all at a very low simmer, stir in sugar and cardamon, turn off the heat, reflect on the simple fact that we're some of the luckiest beings alive at this moment, and then serve it out. Eat.
